Description
This Berry Icebox Cake is a delightful no-bake dessert that combines creamy layers of whipped cream, cream cheese, fresh strawberries, and blueberries. It’s perfect for gatherings and offers a refreshing taste that everyone will love.
Ingredients
Scale
- 1 8-ounce block cream cheese, softened
- 1/2 cup confectioners’ sugar
- 2 cups heavy whipping cream
- 1 teaspoon pure vanilla extract
- 18 graham cracker sheets, 2 whole sleeves
- 1 pound strawberries, sliced
- 1 cup blueberries
- extra strawberries, blueberries, and fresh mint, for topping the cake
Instructions
- Prepare the whipped cream mixture by beating cream cheese and confectioners’ sugar until smooth. Incorporate heavy whipping cream and vanilla extract, then beat until stiff peaks form.
- In an 8×8-inch baking dish, spread a thin layer of the whipped cream mixture at the bottom. Arrange graham crackers over it, breaking them to fit as needed.
- Spread a third of the whipped cream mixture over the graham crackers, followed by half of the sliced strawberries and blueberries.
- Add another layer of graham crackers, then another third of the whipped cream mixture. Top this layer with the remaining strawberries and blueberries.
- Finish with a final layer of graham crackers topped with the remaining whipped cream mixture, smoothing it out evenly.
- Cover and refrigerate for at least six hours, or overnight. This allows the graham crackers to soften and the cake to set.
- Before serving, garnish with extra strawberries, blueberries, and fresh mint. Slice and enjoy!
Notes
For best results, chill overnight to enhance flavors and texture.
