Description

This Beef Burrito is a delightful dish featuring savory ground beef, black beans, and melted cheese wrapped in a soft tortilla, perfect for a satisfying dinner or a quick snack.

  • 1 pound lean ground beef
  • 1 ½ teaspoons chili powder
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • ¾ teaspoon kosher salt
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • 1 small yellow or white onion (¼-inch diced)
  • 1 (15-ounce) can reduced-sodium black beans, rinsed and drained
  • 1 cup prepared salsa
  • 6 burrito-size flour tortillas (about 10 inches)
  • 2 cups (8 ounces) shredded Monterey Jack, sharp cheddar, or Mexican blend cheese
  • Sour cream
  • Avocado
  • Hot sauce
  • Chopped fresh cilantro

Instructions

  1. Heat the canola oil in a large skillet over medium-high heat.
  2. Add the ground beef into the skillet, pressing it down to form a large patty and letting it sizzle for 3 to 4 minutes.
  3. Sprinkle chili powder, oregano, cumin, salt, garlic powder, and smoked paprika over the beef and add the diced onion.
  4. Break the beef into small pieces with a spoon and cook until it's fully browned, about 4 minutes more.
  5. Stir in the black beans and salsa, cooking until the mixture is heated through and the liquid reduces, about 1 minute.
  6. Assemble each burrito by placing a tortilla on a surface, adding cheese, beef mixture, and more cheese in the center.
  7. Fold in the sides of the tortilla and roll it to secure the filling.
  8. Warm a nonstick skillet and brown the burrito seam side down for 1 to 2 minutes on each side until golden, then serve with toppings.
