- 2.5 lbs chicken thighs boneless skinless
- 2 tablespoon brown sugar
- 2 teaspoon kosher salt
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- ½ teaspoon chili powder
- 3 tbsp avocado oil
- 1 cup homemade southern bbq sauce
Instructions
- Place the chicken thighs in a large bowl and season with brown sugar, kosher salt, garlic powder, onion powder, smoked paprika, chili powder, and avocado oil. Mix well and marinate for at least 4 hours or overnight.
- Take the chicken out of the fridge 30 minutes before grilling.
- While the chicken warms up, preheat your grill to medium-high heat.
- Place the marinated chicken thighs on the grill, reduce to medium heat, and cover. Cook for a few minutes on each side until grill marks appear.
- Once the chicken is nearly cooked through, baste both sides with BBQ sauce and move to indirect heat, allowing the sauce to absorb and finish cooking.
- Remove the chicken when its internal temperature reaches 175-190°F for dark meat (or 165°F for white meat) and serve with extra BBQ sauce.
Notes
Marinating overnight will enhance the flavor significantly.
Adjust spice levels by adding more chili powder if you prefer extra heat.
For the best results, use a meat thermometer to ensure proper cooking.
