Instructions
- Preheat the oven to 400 degrees F.
- Pat dry the cod filets with a kitchen towel and set aside.
- In a bowl, combine flour, salt, garlic powder, ground pepper, paprika, and Italian seasoning for the breading mix.
- In a separate bowl, mix the eggs with a splash of water and whisk until blended, then set aside.
- In another bowl, combine panko breadcrumbs with dried parsley and set aside.
- Coat the cod filets first in the flour mixture, then in the egg mixture, and finally in the breadcrumb mix, ensuring even coverage.
- Place the coated filets on a parchment-lined baking tray and spray the tops lightly with cooking spray.
- Bake in the preheated oven for 12-15 minutes, or until the cod is cooked through.
- Garnish cooked filets with chopped parsley and serve with lemon wedges and greens.
