Instructions
- Preheat your oven to 425°F (220°C). Bring the chicken thighs to room temperature and pat them dry with a paper towel.
- In a small bowl, combine all herbs and spices to create the seasoning mix.
- In a large mixing bowl, place the chicken thighs, drizzle with olive oil, and add about two-thirds of the seasoning mix. Coat the chicken thoroughly, ensuring to get under the skin.
- Place the seasoned chicken on a rack set over a baking sheet, then sprinkle the remaining seasoning mix on top.
- Bake the chicken thighs in the preheated oven for 35 to 40 minutes, or until their internal temperature reaches 170°F. For extra crispiness, broil them for an additional 2 to 3 minutes. Allow the chicken to rest for 5 minutes before serving.
