  • 8 chicken thighs (bone-in, skin-on)
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 ½ teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper

Instructions

  • Preheat your oven to 425°F (220°C). Bring the chicken thighs to room temperature and pat them dry with a paper towel.
  • In a small bowl, combine all herbs and spices to create the seasoning mix.
  • In a large mixing bowl, place the chicken thighs, drizzle with olive oil, and add about two-thirds of the seasoning mix. Coat the chicken thoroughly, ensuring to get under the skin.
  • Place the seasoned chicken on a rack set over a baking sheet, then sprinkle the remaining seasoning mix on top.
  • Bake the chicken thighs in the preheated oven for 35 to 40 minutes, or until their internal temperature reaches 170°F. For extra crispiness, broil them for an additional 2 to 3 minutes. Allow the chicken to rest for 5 minutes before serving.

Notes

For best results, let the chicken marinate for 30 minutes with the seasoning before baking.
Ensure the chicken is patted dry for crispier skin during baking.
