- 2 cups heavy cream, cold
- ¾ cup granulated sugar
- 1 teaspoon vanilla extract
- 2 tablespoons vanilla instant pudding
- ⅔ cup Irish cream
- 1 lb mascarpone cheese, room temperature
- 27 ladyfingers
- 1 cup espresso
- 2 tablespoons Irish cream
- 2 tablespoons cocoa powder
Instructions
- In a large mixing bowl, combine the cold heavy cream, sugar, Baileys Irish cream, vanilla extract, and vanilla instant pudding. Mix with an electric hand mixer until soft peaks form.
- Add the room-temperature mascarpone cheese and blend until smooth and creamy, being careful not to overmix to prevent curdling.
- Mix espresso and Baileys in a shallow bowl. Quickly dip each ladyfinger in the mixture (1-2 seconds) and arrange them in an even layer in a 13 by 9-inch baking dish.
- Spread half of the mascarpone mixture over the soaked ladyfingers, smoothing it out with a spatula.
- Add another layer of dipped ladyfingers, followed by a thin layer of the mascarpone cream.
- Fill a piping bag with the remaining mascarpone filling and pipe dollops over the thin layer.
- Cover the dish with plastic wrap and refrigerate for at least 4 hours to allow the ladyfingers to soften. Before serving, dust generously with cocoa powder.
Notes
For a stronger coffee flavor, use more espresso when soaking the ladyfingers.
Make sure the mascarpone cheese is fully mixed to achieve a creamy texture.
Chill the tiramisu overnight for the best results.
