This Avocado Dressing boasts an irresistible flavor with creamy texture, made from fresh avocado, lemon, and herbs for a quick, healthy addition to your meals.

- 1 ripe avocado
- 1/4 cup white wine vinegar
- 1 lemon – juice only
- 1 garlic clove
- 3/4 cup avocado oil
- 2 tbsp agave nectar
- 2 tbsp cilantro (or basil, or parsley)
- coarse kosher salt to taste
Instructions
- Ensure you have a blender or food processor ready, preferably with a top opening for adding ingredients while blending.
- Cut the avocado in half, remove the pit and skin, and place the flesh into the blender or food processor.
- Add white wine vinegar, lemon juice, agave nectar, garlic clove, cilantro, and salt into the blender. Do not add the oil yet!
- Secure the lid and begin blending, slowly drizzling in the avocado oil while the blender runs. Blend for a few additional seconds once all the oil is added.
- Check the consistency and taste, adjusting salt as necessary. If a thinner dressing is desired, blend in more avocado oil (about 1/4 cup) until reaching the preferred thickness.
Notes
For a different flavor profile, consider substituting cilantro with basil or parsley.
Always taste the dressing before serving to adjust seasoning according to your preference.
Store any leftover dressing in the refrigerator for up to a week.
