Apple Pie Overnight Oats combine the delightful flavors of apples and warming spices with hearty oats for a healthy, satisfying breakfast. This simple recipe makes meal prep a breeze, perfect for busy mornings or a comforting meal at home.

- ½ cup chopped apple, about 1/2 a large apple
- 1 teaspoon maple syrup
- pinch of cinnamon
- ½ cup old fashioned oats
- ½–¾ cup unsweetened almond milk
- ¼ cup plain greek yogurt or coconut yogurt
- 2 teaspoons maple syrup, honey or your favorite sweetener
- ½ teaspoon vanilla
- ½ teaspoon cinnamon, or apple pie spice
- Toppings: cinnamon apples, nut butter, chopped nuts, chia or hemp seeds
Instructions
- In a small microwave-safe bowl, combine chopped apples, maple syrup, and a pinch of cinnamon. Stir to coat the apples and microwave for 30 – 60 seconds until slightly softened. Reserve ¼ cup for topping.
- In a dish with a lid, add oats, almond milk, yogurt, additional maple syrup, vanilla, and cinnamon.
- Mix in ¼ cup of the cooked cinnamon apples with the oat mixture, then cover and shake lightly to combine.
- Refrigerate overnight, or for at least 30-60 minutes if you want to eat them sooner.
- Before serving, remove the lid and adjust the consistency with more yogurt or almond milk as needed. Top with the reserved apples and your preferred toppings.
Notes
Feel free to swap in your favorite type of milk or yogurt for personal preference.
This recipe can be made ahead of time, keeping well in the fridge for up to 3 days.
Experiment with different toppings like nut butter or seeds to suit your taste.
