This Apple Coffee Cake is a delightful blend of flavors, featuring fresh apples and a perfect touch of cinnamon. It’s incredibly easy to make, ideal for sharing at brunch or enjoying with a cup of coffee.

- 3 cups (360g) all-purpose flour
- 2 cups (426g) brown sugar, packed
- 2 ½ tbsp cinnamon
- 1 ½ tsp salt
- 1 cup (226 grams) unsalted butter, melted
- 2 ½ tsp baking powder
- 1 tsp salt
- 1 cup (226g) unsalted butter, softened
- 2 cups (396g) granulated sugar
- 4 large eggs
- 2 tsp vanilla extract
- 1 cup (227g) sour cream
- ½ cup (118ml) milk
- 2 ½–3 cups (about 285-315g) diced apples, cut into ¼-inch chunks
- 1 cup (113g) powdered sugar
- ½ tsp vanilla extract
- 2–4 tbsp heavy cream or milk
Instructions
- Preheat the oven to 350°F (175°C).
- Grease a 9×13 inch baking pan.
- In a bowl, combine the all-purpose flour, brown sugar, cinnamon, and salt, mixing well.
- Add melted butter to the dry ingredients, mixing until crumbly.
- In another bowl, combine baking powder, softened butter, granulated sugar, eggs, vanilla extract, sour cream, and milk, blending until smooth.
- Gently fold in the diced apples into the batter.
- Pour half of the batter into the prepared baking pan. Sprinkle ½ of the crumb mixture on top.
- Add the remaining batter and then top with the rest of the crumb mixture.
- Bake for about 40-45 minutes or until a toothpick inserted in the center comes out clean.
Notes
Ensure you use a proper 9×13 inch pan for best results.
The cake can be stored at room temperature for up to 3 days.
For extra flavor, consider adding nuts or a drizzle of caramel sauce on top.
