Ingredients
Scale
- 1 cup peeled, cored, and chopped apples (½” pieces)
- ⅛ teaspoon ground cinnamon
- 1 tablespoon dark brown sugar
- 1¼ cups all-purpose flour
- ¾ teaspoons baking powder
- ¼ teaspoon kosher salt
- ½ teaspoon ground cinnamon
- ⅛ teaspoon ground nutmeg
- ½ cup unsalted butter, melted
- ¾ cups dark brown sugar, packed
- 1 large egg, room temperature
- 1 teaspoon vanilla extract
- 1 cup powdered sugar
- ¼ teaspoon vanilla extract
- ½ teaspoon cinnamon
- 2 tablespoons milk
Instructions
- In a frying pan over medium heat, combine the chopped apples, dark brown sugar, and ground cinnamon. Cook for about 5 minutes, stirring occasionally, until the apples soften. Transfer to a plate to cool.
- Preheat the oven to 350°F. Grease and line an 8×8” pan with parchment paper, allowing overhangs for easy removal.
- In a large bowl, whisk together the flour, baking powder, kosher salt, cinnamon, and nutmeg.
- In another bowl, whisk together the melted butter, packed brown sugar, egg, and vanilla extract until smooth.
- Combine the wet mixture with the dry ingredients, folding gently with a rubber spatula until nearly combined. Gently fold in the cooled apples and their juices.
- Spread the batter evenly in the prepared pan and bake for 18-22 minutes or until lightly browned on top. Be careful not to overbake!
- Allow to cool completely on a wire rack before adding icing.
Notes
Make sure to use freshly chopped apples for the best flavor.
For added texture, consider adding walnuts or pecans to the batter.
You can adjust the amount of cinnamon to suit your taste.
