Description

Savor the amazing flavors of Air Fryer Greek Roasted Potatoes! This dish combines baby yukon gold potatoes with Greek dressing and seasonings for a healthy and delicious side that complements any meal. Perfect for quick dinners and easy gatherings.


Ingredients

  • 3 pounds baby yukon gold potatoes
  • ¼ cup greek salad dressing
  • 1 ½ teaspoons greek seasoning blend
  • ½ lemon juice of

Instructions

  1. Chop the potatoes into halves, quartering any extra large ones, and place them in a large bowl filled with cold water to soak for 30 minutes.
  2. Drain the water from the potatoes and rinse them thoroughly with fresh water.
  3. Dry the potatoes completely, then add to a mixing bowl with the salad dressing and Greek seasoning. Toss well to coat evenly.
  4. Spray the air fryer basket with non-stick spray, then add the coated potatoes. Air fry at 400 degrees for 20 minutes, shaking the basket every 5 minutes for even cooking.
  5. Taste the potatoes and add more Greek seasoning if needed. Garnish with fresh parsley and a squeeze of lemon juice before serving.

Ensure the potatoes are thoroughly dried for better crispiness when air frying.
