- 1/4 cup (60 ml) whipping cream or heavy cream
- 4 ounces (112 grams) full-fat cream cheese
- 1/3 cup (56 grams) white chocolate chopped and melted
- 1/2 cup (120 grams) plain greek yogurt
- 1/2 cup (60 grams) fresh or frozen raspberries mashed with a fork
- fresh raspberries for garnish, optional
Instructions
- In a small bowl, beat the cream with an electric mixer until stiff peaks form, being careful not to over mix it.
- In a separate bowl, combine the cream cheese and melted white chocolate using the same beaters.
- Add Greek yogurt to the cream cheese mixture and mix until well combined, then fold in the mashed raspberries.
- Carefully fold in all but a tablespoon of the whipped cream to keep the mousse light.
- Spoon the mousse into two serving glasses and serve immediately or chill for up to eight hours for a softer texture.
- Top with the reserved whipped cream and garnish with fresh raspberries if desired.
Notes
Using heavy cream will yield a richer mousse.
Feel free to adjust the sweetness by adding powdered sugar if desired, depending on your taste and the tartness of the raspberries.
Mousse can be prepared a day in advance for easy entertaining.
