- 15.25 ounce strawberry cake mix
- 8 ounce block cream cheese softened to room temperature
- ⅓ cup cream cheese chips roughly chopped
- 2 10 oz bags ghirardelli vanilla melting wafers
- ½ cup wilton pink candy melts
- ½ cup wilton bright pink candy melts
- Sprinkles optional
Instructions
- Preheat the oven to 350°F and prepare a baking sheet with parchment paper. Heat treat the cake mix to eliminate any bacteria.
- Spread the cake mix evenly on the baking sheet and bake for 5 minutes. Remove and let it cool completely on a wire rack.
- In a medium mixing bowl, beat softened cream cheese with a hand mixer until smooth and creamy.
- Fold in the cooled cake mix carefully, then mix with the hand mixer until a dough consistency forms.
- Gently fold in the cream cheese chips until well combined.
- Cover the cake dough with plastic wrap and refrigerate for 2 hours to chill.
- Line two baking sheets with parchment paper. Use a 1 ½ tablespoon cookie scoop to form dough balls and place them on the sheets. Roll each into a smooth ball and let them sit for about 15 minutes.
- Melt the vanilla wafers using a double boiler or microwave, stirring frequently until fully melted.
- Dip each dough ball in the melted vanilla wafers, allowing excess coating to drip off. Place the coated balls back on the lined baking sheets.
- Before the coating dries, sprinkle half of the balls with your choice of sprinkles.
- Melt the pink candy melts in separate piping bags in the microwave. Cut a small tip and drizzle over the remaining coated cake balls.
- Let the truffles set completely before serving. Enjoy!
Notes
Make sure the cream cheese is at room temperature for easier mixing.
Using quality melting wafers will enhance the truffle’s flavor and texture. Consider doing a test dip with one ball to check consistency before finishing all the truffles.
If you’re in a hurry, you can skip the chilling step, but the truffles will be easier to work with when chilled.
