Description

Ingredients

  • 8 oz quality chocolate semi-sweet or dark chocolate
  • 4 tbsp unsalted butter (can substitute with vegan butter)
  • 1 cup heavy cream (coconut cream for dairy-free option)
  • 1 tbsp gelatin (consider agar-agar for vegetarian option)
  • 1 cup granulated sugar (coconut sugar for less refined sweetness)
  • 1 tsp sea salt (fleur de sel for gourmet finish)
  • 1 cup fresh berries (for vibrant presentation)
  • 1/4 cup chocolate shavings (for elegant finish)

Instructions

  • Melt the chocolate and unsalted butter together in a double boiler, stirring gently until smooth. Set aside to cool slightly.
  • Whip the heavy cream in a large mixing bowl until soft peaks form. Fold it into the cooled chocolate mixture gently.
  • Cook the granulated sugar in a medium saucepan over medium heat until golden amber. Add butter and heavy cream while stirring continuously until smooth, then add sea salt.
  • Spoon the mousse into dome molds, creating an indentation in each. Fill with salted caramel and cover with more mousse. Chill for at least 4 hours.
  • Unmold the chilled mousse domes by gently pressing on the sides and serve chilled.
  • Optional: Garnish with fresh berries or chocolate shavings before serving.

Notes

Make sure to let the chocolate mixture cool slightly before folding in the whipped cream for a smoother consistency.
For a vegan version, use coconut cream and vegan butter as substitutes.
Chilling the mousse for longer than 4 hours will enhance the flavors.
