These Decadent Cottage Cheese Date Brownies offer an irresistible mix of flavor and nutrition. Featuring creamy cottage cheese and sweet dates, these brownies are perfect for a quick dessert or health-conscious snack, making them a delicious choice for everyone!

- 10 dates (soaked in hot water for 10 minutes to soften)
- 1/2 cup almond flour
- 4 tbsp chocolate protein powder (i use optimum nutrition gold standard)
- 2 tbsp cocoa powder
- 2 1/2 tbsp maple syrup
- 1 tsp vanilla
- 1/8 teaspoon salt
- 1 cup cottage cheese (good culture brand provides the best thick texture)
- 1/2 cup vanilla protein powder
- 1 1/4 cups almond flour (i always use king arthur for a finer crumb)
- 2 1/2 tbsp maple syrup
- 2 tbsp cashew butter
- 1 1/2 tsp vanilla
- 1/3 cup mini chocolate chips (i prefer enjoy life for their clean ingredients)
Instructions
- Soak 10 dates in hot water for 10 minutes to soften, then drain them. Blend dates, chocolate protein powder, cocoa powder, maple syrup, vanilla, and salt in a food processor until smooth.
- In a bowl, mix cottage cheese, vanilla protein powder, almond flour, cashew butter, remaining maple syrup, and vanilla until smooth. Fold in mini chocolate chips.
- Line an 8×8 inch baking dish with parchment paper. Press the date mixture evenly across the bottom. Spread the cottage cheese mixture over it, smoothing it out.
- Freeze the dish for at least 1 hour until firm. Lift the block out with parchment, cut into squares, and serve directly from the freezer or let sit at room temperature for 5 minutes.
Notes
The brownies can be stored in the freezer for a longer shelf life.
Using soaked dates as a natural sweetener is a healthy alternative, enhancing the fudgy texture.
For cleaner cuts, dip your knife in hot water before slicing.
